You will need:
2-3 over ripe Bananas
3/4 cup of caster sugar/powdered sugar
2 eggs
50-60 grams of butter
1 cup APF (all purpose flour/Maida)
1/2 tsp baking powder
1/2 tsp cinnamon powder
Vanilla extract
optional - Choco chips, walnuts, almonds (your choice of nuts)
Method:
peel the ripe bananas into a bowl, mash them really well until no lumps are left. If the bananas are not ripe, you can bake them in the over for 12-15 minutes until they turn black.
Add powdered/caster sugar to mashed bananas in the bowl. pro tip : sift the powder through a sieve for easier mixing without lumps.
Mix both the ingredients really well, until the sugar is completely dissolved.
Add eggs one by one, i.e., add Egg #1 mix it well, and then Egg #2 and then mix it well.
Melt butter in the microwave, add the melted butter to the banana-sugar-egg mix.
Sift the APF into the mix. Along with APF, add baking powder and cinnamon powder as well. Pro tip : you can also add a tbsp of cocoa powder to enhance the taste, or any other sweet spice, nutmeg powder, ginger powder for extra flavor.
Add vanilla extract, mix everything well. make sure there are no lumps. (Important: DO NOT overmix the batter, it can turn the batter doughy as it starts the formation of gluten. Mix only until everything is well combined)
Add your choice of nuts/Choco chips to the batter and fold them in.
Transfer the batter to a greased tin. I used a bread mold, you can use a round small 6" pan or a square one as well.
Bake in a preheated over at 180 degree Celsius for about 40 minutes. mine took around 43-45 minutes.
Poke with a skewer to check if its done. Do not open the oven door AGAIN and AGAIN to check.

-The quantity of bananas depend upon the size of the bananas, if you have bigger bananas, use only two!
-Again, the consistency of the batter will depend upon the size of the bananas and the eggs, the more the quantity of these two the thinner batter.
-If your batter is too thick, add half a cup of milk to thin it out.
-Do not over whip the batter, or it will turn very doughy upon baking.
-Preheat the oven at 180° Celsius before baking the bread.
-If you're using a shallower and wider pan, reduce the baking time to 30 mins or so.
